Mini Pizza Rolls

June 539I’m on a bit of a Pizza kick! 

I made these bite sized (okay, two or three bites) to take to a party and served them next to some Marinara sauce, they were delicious!

Pizza Rolls from A Passion for Baking

  • 1 1/2 cups warm water
  • 5 tsp quick rising yeast
  • 2 tbsp sugar
  • 1/3 cup olive oil
  • 2 1/2 tsp salt
  • 4-5 cups bread flour (i used all purpose, nobody noticed)
  • Pizza Toppings

For the Dough:

In your mixer bowl, whisk yeast into warm water and let stand for 3-5 minutes.

Whisk in the sugar, Olive oil and salt.

Add half of the flour.  Begin to mix using a dough hook attachment and add flour until the dough begins to pull away from the bottom and sides of the bowl.  Knead for about 8 minutes. 

Set dough in a well greased bowl, cover and let rise for 45 minutes.

Preheat the Oven to 375 degrees line two baking sheets with parchment paper.   To make Mini rolls, I had to bake in two batches…I let the second two portions of the dough rest in the fridge until i was ready to use it.

Gently deflate dough and divide into 4 portions (for large pizza rolls, divide the dough in half  *note baking time will be longer!)  Roll out a portion of dough into a rectangle and cover with pizza toppings.  In my case, pesto, chopped fresh spinach, feta cheese and mozarella.   Roll it up cinnamon bun style and slice it with DENTAL FLOSS.  Don’t use a knife, you’ll have a squashed up mess! 

To use floss:  take a long piece, slide it underneath the roll of dough placing it where you want to cut.  Bring both sides of floss up over the dough and cross them over.  Pull gently.   You’ll have a nice clean cut!

 Place rolls on a baking sheet and sprinkle tops with grated parmensan cheese.  Let rest under a towel for 20 minutes.

Bake about 15 minutes or until rolls are lightly browned and cheese is bubbly!

Serve em up next to some marinara sauce (imagine it there in the empty bowl!)  and you’ll make lots of new friends!
