Giant Sugar Cookies from Joy the Baker

  •  1/2 cup  unsalted butter, at room temperature
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar, plus additional for sugaring tops
  • 1/2 cup powdered sugar
  • 1 large egg
  • 2 teaspoons vanilla extract, or the seeds of 1 vanilla bean ( i didn’t have a vanilla bean)
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Preheat oven to 350 degrees and line baking sheet with parchment.

In the bowl of a mixer fitted with the paddle attachment beat butter.  Add Vegetable oil and beat until combined.  Gradually add both sugars, egg and vanilla and beat until everything is well combined. 

Mix in the dry ingredients, the  dough will be a bit soft and sticky. 

Chill the dough for one hour.

Roll dough into 2 inch balls and place on prepared baking sheet about 2 inches apart. (i did 6 cookies per sheet)  Using your fingers, or the bottom of a glass dipped in sugar, flatten the cookies.  Sprinkle the tops with sugar and bake for 12-14 minutes or until the edges are golden brown.
