Cowboy (cruising) Cookies

So you’re probably wondering why these are called cruising cookies?

It’s Secret Recipe Club time again, I had the pleasure of scrolling through ALL of the recipe from “On the Move – In the Galley”  where all of the recipe are made by Dee from Seattle in the galley of a boat (makes perfect sense now, right!)  Sounds like she’s probably cruised around my Island…maybe I’ve waved to her from the beach??  😉

I had a lot of savory recipes to choose from but found a few cookie and dessert recipes hidden in there.  I chose the oatmeal, raisin version of the “cruising” or cowboy cookie, and opted to leave out the nuts as my daughter’s classroom is a nut free zone.  When I first read through the recipe I thought the baking time was wrong, 17-20 minutes to bake?? no way!   Boy was I wrong, these cookies spread out so nicely and really did take the full time to bake up just right!   I eyeballed my butter thinking it looked like about 6 tbsp….I think it was more like 7  as my cookies spread a significant amount.  Science Schmience, they still taste great and goes to show you that baker error is quite common!

Cowboy (cruising) cookies  makes 24  recipe from On The Move – In the Galley

  • 1/2 cup white flour
  • 1/4 cup whole wheat flour
  • 1/8 cup ground flax (optional)
  • 3⁄4 teaspoon baking powder
  • 3⁄4 teaspoon baking soda
  • 3⁄4 teaspoon cinnamon
  • 1⁄4 teaspoon sea salt
  • 6 tablespoons unsalted butter, at room temperature
  • 6 tablespoons sugar
  • 6 tablespoons brown sugar
  • 1 large egg
  • 3⁄4 teaspoon vanilla extract
  • 3⁄4 cup rolled oats
  • 1⁄2 cup semisweet chocolate chips
  • 1⁄2 cup pecans, chopped
  • 1⁄2 cup dried cranberries or raisins
  • 1⁄2 cup shredded coconut

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

Cream together the butter and sugars until light and fluffy, then add the egg followed by the vanilla.

In another bowl, mix together the flours with the spices, oats, baking powder, soda, and flax.

Mix the dry ingredients into the butter mixture and mix well.   Fold in the remaining goodies (coconut, raisins, etc)

Drop by rounded tablespoons full onto prepared pan (12 per large cookie sheet)  bake cookies for 17-20 minutes, until lightly golden and baked all the way through.

    Katie, I love that we baked from each other’s blogs, you sought sweet and I looked for savory! We need to meet up on the island and share a treat in person.

    I actually kinda like how they turned out, so maybe next time you’ll add an extra tablespoon of butter on purpose! LOL. Great choice and delicious looking cookies!
