Chunky Monkey Cookies
I love finding recipes that are easy to make, and that I can feel really good about feeding to me kids on a regular basis! My mom passed on a recipe to me that came from my sister for an oat cookie that had no added sugar and sweetened with mashed bananas. These can be made vegan, can be made gluten free and are all around pretty good for you! The cookies are big and hearty, a little bit cakey and packed full of nuts, dried fruits and seeds! I’ve also added coconut flour to up the fibre content which is not an ingredient everyone has kicking around in their pantry…feel free to leave it out as it’s not an essential ingredient! I then took that recipe (because I can’t just leave things the way they are) and made a chocolate, peanut butter version! I will provide you with both recipes and I encourage you to experiment with different combinations of add ins!
These will definitely be a regular staple in our lunch boxes!
(Oat cookies, original recipe)
Oat Cookies (the original) makes 12-14 large cookies

2-3 mashed bananas

1/2 cup oats (use whatever kind of flaked grain you prefer)

1 cup unsweetened coconut

1 tbsp flax meal

1/2 tsp salt

3/4 cup chopped nuts and seeds

1/2 cup dried fruit

1/4 cup coconut oil
-
1 tbsp agave or honey
-
1 tsp vanilla
Preheat the oven to 350 degrees. Line a cookie sheet with parchment or silpat liner.
Mix all of the ingredients together, scoop dough into 1/4 cup size balls, flatten slightly on the pan.
Bake for 20 minutes and cool completely on the pan.

2 heaping tbsp peanut butter

1 cup oats

1/4 cup wheat bran

1/4 cup coconut flour

2 tbsp flax meal

3/4 cup chopped nuts (i used cashews but peanuts would have been really good)

1/2 cup raisins
-
1/4 cup coconut oil
-
1 tsp vanilla
-
1 tbsp agave or honey
-
1/3 cup miniature chocolate chips.
Same instructions as above to bake! If you leave out the coconut flour, you may need to slightly increase one of the other dry ingredients, but keep in mind the cookie dough is quite slack but they will bake up to be really sturdy!
Those chunky monkey cookies look very delicious and even quite healthy 😉
