Simple Brown Sugar Cake

Last week was a bad week.

crazy kids, cranky baby, over worked husband, tired mommy and some car troubles…3 weeks before we’re driving half way across the country!  New tires anyone??

I needed cake.  Cake makes things better right?

Thankfully my Secret Recipe Club assigned blog A Dusting of Sugar had recently posted this recipe for a simple brown sugar cake (how did I live without boiled brown sugar icing?)

This cake is delicious.  It’s a little on the drier side but it adds to its character 🙂  This is the perfect cake to go with a cup of coffee or tea and it packs well in a lunch box…it was a big hit here!  I adjusted the recipe to bake just half of the original, and I baked in a 9 X 13″ greased pan for about 22 minutes.

Brown Sugar Cake from a dusting of sugar

  • 1/2 cup butter
  • 1/4 cup crisco
  • 1 cups brown sugar
  • 3 eggs
  • 1 1/5 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 cup milk
  • 1/2 tablespoon vanilla extract


  • 1/2 cup butter
  • 1/2 cup packed brown sugar
  • 1/8 cup milk
  • 1 1/4 cup powdered sugar, sifted.

To make the cake:

Preheat the oven to 350 degrees.

Cream the butter, crisco and sugar together until light and fluffy. About 3 minutes.

Beat the eggs in one at a time scraping down the sides of the bowl after each addition.

Add the vanilla, milk and then the dry ingredients.

Mix until incorporated.

pour mixture evenly into greased 9X13″ pan and bale for about 22 minutes, or until a pick inserted to the middle comes out clean.

Once cake comes out of the oven you can prepare the frosting.

Melt the butter and the brown sugar over medium heat.  Once boiling, reduce to low and boil for 2 minutes.   Add the milk and stir until it begins to boil again.  Remove from heat.

Stir in the sifted powdered sugar.

(at this point you need to work fairly quickly as the frosting will begin to harden up a bit)

Pour and spread the frosting evenly over the warm cake and then set aside to cool.

Cut into slices and serve.

    that looks lovely! do you think you could skip the crisco and use 3/4 cup butter instead?

      I totally think you could skip the crisco and use butter and it’s likely what I’ll do the next time I make this cake!
