Cranberry Apple Crisp

October 3, 2011

I don’t often post recipes that I’ve just come up with my own.

I create things fairly often but most of the time I neglect to write down amounts and details and then I forget what I used to create the recipe but this is time I remembered!

A crisp is a delicious and easy dessert to throw together in a pinch and you likely have everything you need in the pantry or fridge to get going right away.  You can really use any type of fruit you have kicking around, sweeten it up and add a crunchy oat topping.  Perfect served with a big scoop of Vanilla ice cream!

Cranberry Apple Crisp

  • 6 apples (I used gala apples and found it a little bit sweet so next time would cut the sugar in half, but this would be great with a tart apple such as a granny smith)
  • 1/2 cup light brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 3 tsp cornstarch
  • pinch of nutmeg
  • 1 can whole berry cranberry sauce
  • pinch of salt
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 6 tbsp butter, melted

Preheat the oven to 350 degrees.

Peel, core and slice the apples into 1/2″ pieces.

Toss the apples with the sugar, vanilla, cinnamon nutmeg and cornstarch.

Spread apples evenly into a 9X13″ baking dish and spoon cranberry sauce over the apples.

In another bowl (you should actually use the same bowl you used for the apples…save some dishes) mix the oats, flour, sugar and cinnamon.  Add the melted butter and stir with a wooden spoon until there are no dry bit of flour/oat mixture left.

Spread the oat mixture over the apples and cranberry sauce.

Bake for 40-60 minutes (depending on how soft you like the apples) and until the topping is golden brown and crunchy.

Serve warm with vanilla ice cream or a drizzle of sweetened heavy cream.
