When my niece came over to visit last week we decided to bake chocolate chip cookies so she could take some home to her family. To keep them from being less than ordinary we decided to add colourful smarties to the tops and rainbow sprinkles to the cookie dough.
I’ve used the recipe for the peanut butter cup stuffed cookies and just added sprinkles. These cookies are soft, chewy and delicious!
Sprinkle Cookies recipe adapted from picky-palate
1 cup softened butter
1 cup granulated sugar
3/4 cup brown sugar
2 large eggs, room temperature
1 tbsp vanilla extract
3 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chip
1/4 cup rainbow sprinkles
candy coated chocolates such as smarties or M&M’s
Pre-heat the oven to 350 degrees
Line baking sheets with parchment paper.
Cream together the butter and both sugars until well combined, 2-3 minutes. Add vanilla, followed by the eggs. (I always wondered why my cookies didn’t spread properly, I think using room temperature eggs helps the cookies spread more evenly)
Whisk together the dry ingredients and add them to the wet ingredients, be sure to mix until everything is well combined. Add the chocolate chips and sprinkles.
Scoop cookies by rounded tbsp and place on the prepared pan. Top each cookies with 3 smarties. Using the palm of your hand, gently “smoosh” the cookies to flatted them slightly.
Bake 9-11 minutes or until the edges are a light golden brown and the middles look slightly under baked.
Remove from the oven and rap the bottom of the pan on th counter top to help the cookies settle.
Let cool on the cookie sheet.
