Everything But The Kitchen Sink (Cookies)

March 27, 2011

It’s been a crazy busy day!

The hubby is working, the kiddos have been driving one another CRAZY, the laundry is behind and the house that I cleaned this morning looks like it’s been hit by a tornado!

Luckily for me, I got to sneak away this afternoon (well, I didn’t really sneak away…I had 2 out of the 3 kids with me) to a fantastic baby shower hosted by my sister.  We were spoiled with beautiful gifts, good company and I ate WAY more than my fill of delicious appies and treats!

There were veggies and dips, toasts with Parmesan, Asparagus and Bacon, Baked Brie with sun-dried tomatoes, croissants with Curried Chicken Salad, Iced Tea, Mexican Chocolate Cupcakes, Lemon Tarts, Key Lime Pie shooters, Milk and Cookie shooters (vanilla panna cotta) and Chocolate Whoopie Pies!

My tiny man is also gaining weight like crazy!  We;re approaching 8lbs!

There’s a blog giveaway going on from Brittany Ericksen to win a cute diaper clutch from Mud Puddles and Daisies.  Tiny man and I are going to test out our luck and see if we win!  Click here to go there and test your luck out too! (if you’re in need of a diaper bag!)

And now for cookies…with everything but the kitchen sink!

These are pretty much clean the cupboard cookies!  You can replace the cereal with that of your choice, and the nuts, raisins and chocolate chips can be replaced with whatever goods you have hanging around (Just keep the amounts similar)

My cookies contain a combination of oats, vector cereal, cocoa nibs, toffee chips, peanut butter chips, almond, raisins and chia seeds.

My kids didn’t love these cookies, but I thought they were a great snack.  If I removed the peanut butter chips and the cocoa nibs and just replaced them with chocolate chips I’m sure they would have been a hit!

Kitchen Sink Cookies

  • 1/2 cup butter
  • 1/4 cup agave nectar (this can be replaced with sugar)
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup old-fashioned oats
  • 1 1/2 cups flaked cereal
  • 1 1/2-2 cups of nuts, raisins, chocolate chips, etc

Preheat oven to 350 degrees

Cream butter and sugar together and mix until light and fluffy.  Add the egg and mix until well combined.  Add vanilla.

Sift together the flour, baking soda and salt.  Add to the butter mixture and mix until everything is well blended.

Stir in the cereal, oats and chocolate chips, raisins…etc.

Use a small 1″ dough scoop and place cookies 2″ apart on the cookie sheet.  Bake for 10 minutes until the cookies are golden brown, they will be VERy puffy!  As soon as cookies come out of the oven squash them flat with the bottom of a glass.

Remove to wire racks to cool.
