Blueberry Breakfast Bars

I’m having a baby next Wednesday! 

I’m feeling super anxious, next Wednesday will be this little guy’s 37 week birthday and he needs to come out because my body has just stopped cooperating!

What I really want to be making are CUPCAKES with cream cheese frosting.  I think eating cupcakes would ease my stress but that’s not allowed to happen so instead I’ll eat blueberry bars with cream cheese icing!

Maybe I can celebrate his birthday with cupcakes?? 🙂

This bar is pretty much hand-held hot cereal on the go!

The recipe is basically the same recipe used to make the Banana Chocolate Peanut butter Cookies I made earlier in the week but with a few adjustments. 

Blueberry Breakfast Bars

  • 1/2 cup flour (I used Rye flour, I was out of whole wheat!)
  • 3/4 cups quinoa flakes (you could use rolled oats here as well)
  • 1/2 cup all bran cereal, crushed
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 tbsp ground flax seed
  • 1/4 cup agave or honey
  • 1/4 cup almond milk
  • 1 tsp vanilla
  • 1 tbsp canola oil
  • 1 ripe banana
  • 1 cup fresh or frozen blueberries

for the icing

  • 2 oz cream cheese, softened
  • agave nectar or honey to sweeten
  • splash of milk
  • 1/2 tsp vanilla

Preheat the oven to 350 degrees and grease an 8″ square pan.

Mix together the Agave, milk, vanilla, canola, and smashed up banana.

Add the dry ingredients and stir to combine.

Fold in the blueberries.

Spread into prepared pan and bake 15-20 minutes or until a pick inserted into the bars comes out clean.

Let cool and cut into bars.

Mix all frosting ingredients together and using a piping bag or a ziplock bag with the tip cut off, pipe icing onto cooled bars.

Chill and serve.
