Date Bran Muffins with Blueberries

Date Bran Muffins with Blueberries recipe adapted from Canadian living.   Makes 12 large muffins

  • 3/4 cup natural wheat bran
  • 3/4 cup All Bran cereal
  • 1 1/2 cups buttermilk
  • 1 cup all purpose flour
  • 1 3/4 cups whole wheat flour
  • 1/2 cup packed brown sugar  OR 1/4 cup agave nectar
  • 1/4 cup ground flax seed
  • 4 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup chopped dates (I soaked my dates in boiling water for about 15 minutes and then pureed them)
  • 2 tbsp molasses
  • 1/3 cup vegetable oil
  • 1 egg, beaten
  • 1 1/2 tsp vanilla extract
  • 1 cup frozen blueberries

Preheat the oven to 375 degrees.  (i reduced to 350 about halfway through the baking time) and grease muffin tins with vegetable shortening

In a bowl, stir the bran cereal, wheat bran and buttermilk and let stand for 10 minutes.

In large bowl, whisk together the flours, flaxseed, baking powder, soda, salt, cinnamon and sugar (if using sugar.  If you are using Agave, add it to the wet ingredients)

INto the bran mixture, whisk the molasses, oil, eggs, vanilla and dates.

Add the wet ingredients to the dry ingredients and mix until everything is moistened.  Stir in the blueberries.

Scoop batter in prepared muffin tins and bake for about 25 minutes or until the tops are firm to the touch and a little bit springy.

Let cool in the pans before removing.
