Chocolate Chip Cookie Dough Brownies
I came across the recipe for these brownies before Christmas and hadn’t forgotten about them since then.
A rich chocolate brownie topped with chocolate chip COOKIE DOUGH and finished off with a layer of chocolate!
I made just half of the recipe and it was perfect to fill a 7X11″ brownie pan (which left me with 16 decent size brownies) They’re pretty sweet so I wouldn’t recommend cutting them too large. I also only had regular size semi sweet chocolate chips on hand but would have prefered miniature chips.
You could serve these at room temperature but I liked them best straight from the fridge!
Chocolate Chip Cookie Dough Brownies recipe from Cookies and Cups
For the brownies: (this is a full recipe that will use a 9X13″ pan)
- 1 cup unsalted butter
- 3/4 cups unsweetened cocoa powder
- 2 1/4 cups granulated sugar
- 1/2 tsp salt
- 3 eggs
- 1 tsp vanilla
- 1 1/4 cup all purpose flour
- 1/2 tsp baking powder
- 1/2 cup miniature chocolate chips (optional)
For the cookie dough layer:
- 1 cup butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 4 tbsp milk
- 1/2 tsp vanilla
- 2 cups all purpose flour
- 1 cup miniature chocolate chips
- 1 cup semi sweet chocolate chips (i used half semi sweet and half milk choc)
- 1/4 cup heavy cream
TO Make the brownies:
Line a 9X13″ baking pan with parchment and preheat the oven to 350 degrees.
In a medium saucepan over medium heat, melt the butter and stir int he cocoa. Remove from heat.
Stir in sugar, salt, eggs and vanilla until smooth. Add flour and baking powder and stir with a wooden spoon until smooth. Stir in chocolate chips.
Spread batter evenly into prepared pan and bake 20-25 minutes or until a toothpick inserted 2″ from the edge comes out clean.
Let the brownies cool completely.
To make the cookie dough:
Beat the butter and sugar together until light and fluffy, add the milk,vanilla, flour and chocolate chips. I also added 4 tbsp of malted milk powder for extra flavour.
Spread cookie dough over the cooled brownie and chill in the fridge.
To mak chocolate topping:
Heat the cream in the microwave for about 30 seconds. Pour over chocolate and let sit 1 minute. Stir until smooth.
Pour chocolate over the chilled cookie dough and let set in the fridge.
Cut into squares and serve.
