Fire Department Cake

This cake was created for a going away party for a member of the volunteer fire department.

It’s a vanilla bean cake with bavarian cream filling, vanilla frosting and rolled marshmallow fondant.

I cheated on this one and used a cake mix and a little cake mix magic to make it a little more sturdy and to taste better!  Here’s the recipe I used…

Tastes Just like home-made Vanilla Bean Cake

  • 1 White box cake mix
  • 1 pkg (4 servings) instant vanilla pudding mix
  • 3 egg whites
  • 1/2 cup water
  • 1/3 cup veg oil
  • 1 cup sour cream
  • 1 tsp vanilla bean paste

Throw everything into the bowl of a mixer and mix at low speed for 30 seconds.  Crank it up to medium and beat it for 2 minutes until the batter is smooth.

Line the bottom of two 8 inch round cake pans with parchment.

Divide batter into two pans, smoothing it out on the surface.

Bake at 350 degrees for 25-35 minutes.
