ABC* Gingerbread Men (*Already been chewed)

My Brother Ryan has these fantastic ABC (Already been chewed) Gingerbread Men cookie cutters and I was lucky enough to get my hands on them for a few days.  He suggested Anna Olson’s recipe for rolled gingerbread and they turned out so adorable and so yummy! 

I created an entire army of them!

Gingerbread recipe from Anna Olson

  • 1/2 cup vegetable shortening or unsalted butter at room temperature (I used butter)
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
  • 1/4 cup grated fresh ginger (I substituted about 2 tbsp ground ginger)
  • 3 cups all purpose flour
  • 1 teaspoon cinnamon
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon ground cloves

Cream  butter and sugar until fluffy and beat in egg and vanilla. Stir in molasses  until evenly blended. In a separate bowl, combine  dry ingredients and add to molasses mixture, stirring just until dough comes together. Shape dough into 2 discs and chill for at least 2 hours before rolling.

Preheat oven to 375 °F.

On a lightly floured surface, roll out 1 disc to just over 1/8-inch thick. Cut out desired shapes and place on a parchment-lined baking sheet. 

 Bake for 6 to 8 minutes until edges are firm to touch. 

Let cookies cool before decorating. with Royal Icing.

    How was the texture of these adorable cookies? Soft? Crisp?

      These gingerbread men had a fairly soft bite. I am still searching for gingerbread recipe that results in a crunchy cookie so if you know of one please share! 🙂
