Cake Truffles

These Cake Truffles are delicious and super easy to put together!

I had some  unfrosted cupcakes leftover in the freezer from when I made the food drive cupcakes and they were perfect to turn into cake truffles.  Bear with me…these aren’t super duper instructions, I just used what I had to make them work.  Basically cake + frosting all mashed up and rolled into balls = cake truffles (or cake pops without the stick!)

I mixed up some frosting using 1/3 cup butter, 2 cups icing sugar, 1/4 cup cocoa and enough kalhua to make a creamy frosting. 

Break the cake or cupcakes up and pulse them in the food processor until they are a fine crumb.  Mix with frosting until you can roll into balls that hold together.  Chill the balls for 10-15 minutes in the freezer.

Melt chocolate of your choice in a double boiler with a tsp of shortening (to make the chocolate nice and glossy)  dip chilled cake balls into chocolate and decorate with sprinkles.
