Miniature Foccacia Bread

Oct 09 272Foccacia Bread is so easy and quick to make!  It only takes 40 minutes to rise and mine turns out perfect everytime.  The regular recipe makes one large loaf but I turned it into 9 miniature loafs instead and used them for Grilled Paninis.  Delicious!

Foccacia Bread

  • 1 Tbsp (15 ml) sugar
  • 1 cup (250 ml) warm water
  • 2 – 0.3 oz packets active dry yeast (4 1/2 tsp)
  • 1 tbsp dried rosemary
  • 1 tbsp dried sweet basil
  • 1 tsp dried oregano
  • 4 cloves crushed garlic
  • 1/3 cup olive oil, plus more for drizzling
  • 3/4 cup (180 ml) hot water
  • 2 tsp (10 ml) salt
  • 4 cups (1 L) all-purpose flour
  • Cornmeal

Dissolve the sugae and yeast in a bowl with 1 cup warm water.  Combine the Olive oil, hearbs, garlic and hot water in a measuring cup and let cool down to lukewarm.

Once cooled, add to the water yeast mixture.  Add salt and flour and knead until dough is very soft.  (It may be a bit sticky.)

Lightly grease a pan with olive oil and sprinkle with cornmeal.  Shape dough into a large round loaf or into several small loaves.  Cover and let rise 40 minutes.

Heat the oven to 425.

Bake for 20-25 minutes (large loaf) or 15-20 minutes for smaller loaves.
