I found this recipe on the weekend on the Pioneer woman cooks. I had some bacon left over in the fridge from the peanut butter bacon cookies and thought that this would be the perfect opportunity to use it up. These biscuits are full of bacon, fried onions and lots of cheddar cheese! The only thing I’d do differently next time is use a whole onion (because i only used half) and I think I’d try switching out the shortening for butter.
Bacon Cheddar breakfast Biscuits adapted from the Pioneer Woman
- 10 slices of bacon, fried, cooled and crumbled.
- 1 cup diced onion
- 1 clove garlic chopped
- 2 cups flour
- 1 heaping tsp baking powder
- 3/4 tsp salt
- 1/4 cup vegetable shortening
- 10 tbsp whole milk
- 4 tbsp vegetable oil
- 1 egg
- 1 heaping cup shredded sharp cheddar
- smoked paprika
Pre heat the oven to 375 degrees and grease up muffin tins *this recipe makes 12*
Fry the bacon, remove it from the pan and drain off most of the grease. Add the chopped onion to the pan and fry until it begins to brown.
Whisk together flour, baking powder, and salt. Cut in shortening with a pastry blender until combined.
In a separate bowl, combine the milk,oil and egg. Whisk together.
Add the wet ingredients to the dry and fold in the bacon, onions and cheddar. Sprinkle tops with a pinch of paprika.
Spoon into muffin tins and bake 20-22 minutes
