Joy’s Virtual Picnic Cupcakes
Joy The Baker had a California Roof top picnic.
We couldn’t go.
Which is okay, I’m totally not trendy enough anyways!
So we had our own roof top picnic instead.
I made these fantastic little cupcakes from Joy the Baker’s blog. They only use 1/2 cup (1 stick) of butter! INCLUDING the buttercream! Super Awesome!
Vanilla Cupcakes with Vanilla Buttercream makes 12 cupcakes
- 1 cup all purpose flour
- 3/4 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
- 3 tbsp room temperature, unsalted butter
- 1/2 cup whole milk
- 1 egg
- 1/2 tsp vanilla
Heat up the oven to 350 degrees.
Combine flour, sugar, baking powder, baking soda , salt and butter. Beat it on low until it looks sandy.
Gradually add in half of the milk and mix until it just comes together.
Whisk the egg and the vanilla into the remaining 1/4 c of milk.
Add the egg mixture to your batter and beat until smooth.
Spoon into lined muffin tins and bake for about 20 minutes.
Cool cupcakes to room temp (I was impatient and threw them in the freezer)
While they’re cooling down you can whip together the frosting!
- 2 cups icing sugar
- 5 tbsp butter, softenend
- 2 tbsp whole milk
- 1/4 tsp vanilla
- food colouring (optional)
Beath the sugar and butter together, Add the milk and vanilla and beat until smooth. This makes exactly enough for your 12 cupcakes 🙂
