Ginger Peach Jam

august 204This Jam is so super delicious.  It’s made with peaches, crystalized ginger and quite a bit of peach schnapps.  The first batch I made didn’t quite set up so we’re just using it like a syrup, but this batch turned out perfect!

Ginger Peach Jam with Peach Schnapps

  • 4 cups of pureed peaches (take the skin off first)
  • 1 pkg certo NO SUGAR needed (this is a lie, you need sugar)
  • 1/4-1/2 cup crystallized ginger finely chopped.
  • 1 cup Peach schnapps OR unsweetened apple juice
  • 3 cups sugar
  • 6 – 250 ml jars with seals

Have your jars and seals sterilized, hot and ready to go.

Put peaches in a large pot with the ginger and peach schnapps.

  Add the pectin, I followed the instructions on the package. 

Stir it until it’s combined.  Bring it to a full rolling boil over high heat.

Let it boil for 1 minute while stirring and then add the sugar.  Continue to stir and bring it back to a boil.  Boil for 3 minutes.

Pour into hot sterilized Jars, seal and process in a hot water bath for 10 minutes.  Let sit undisturbed overnight.
