Chocolate Zuchinni Banana Bread

**updated Sept 2011** There IS supposed to be flour in this recipe, but I’ve accidently left it out and am not sure of the measurement as I posted this so long ago! My appologies!

It must taste pretty good…mind you, my one year old is a bit of a grabage disposal and he LOVES to eat anything and everything!   

Chocolate Zuchinni Banana Bread

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large bananas
  • 2 cups shredded zuchinni (squeeze out the liquid once it’s grated)
  • 2/3 cup buttermilk
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1/3 cup cocoa
  • 1/4 tsp salt
  • 4 eggs


Preheat oven to 350 degrees and grease 2 loaf pans.

Cream butter and sugar together, add the dry ingredients and blend until well combined.   Combine buttermilk with eggs, and mashed banana.  Add the buttermilk mixture into the mixer with everything else and mix until combined.  Fold in zuchinni.

Pour into 2 loaf pans and bake for 55- 60 minutes.

    wondering why there is no flour in this recipe?

      oh good call! There definatley IS supposed to be flour in this recipe, however I made it so long ago and didn’t note my recipe source so I’m not even sure how much flour to include 😦 Sorry about the mistake!
