Ride Your Bike to Work Zuchinni Bran Muffins!

I needed a good snack for the post bike ride to work in the AM’s  I’m riding about 14 km’s with about 80 lbs worth of kid/bike trailer/stuff for the day with me. 

I didn’t ride the bike this week…it was pretty rainy, but this is definatley the snack i’d want to eat when I arrived!

Ride Your Bike to Work Zuchinni Bran Muffins

  • 1 cup hot buttermilk (or soured milk)
  • 1 cup bran
  • 1/4 cup ground flax seed
  • 1 mashed banana
  • 1 cup grated zuchinni
  • 2 eggs
  • 2 tbsp molasses
  • 1 tsp vanilla extract
  • 3/4 cups light brown sugar
  • 1/4 cup canola oil
  • 1/4 cup applesauce
  • 1 1/2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped dates (plumped)

Preheat oven to 375 degrees and prepare muffin tins.

In a bowl stir the buttermilk up with the bran and flax and let hang out for 5 minutes.  

Add the mashed banana to the bran along with the eggs, vanilla,molasses, brown sugar, zuchinni, applesauce and oil.  Stir until it’s well combined.

Sift the dry ingredients together and then fold them into the wet ingredients.

Fold in the chopped dates  **to plump the dates, soak them in hot water for 5 minutes, drain and dry off**

Fill muffin tins (I made about 18 smaller muffins, but you could go big!  Just bake them for a bit longer)  Bake 18-22 minutes or until muffins spring back when pressed in the middle!
