okay….so it’s a day late….but i’m Canadian!

I made these for my Husband for the 4th of July.  He criticized them…they weren’t “red, white and blue,  they were blue, red and white”  again….i’m Canadian, I like red and white things LOL  All the colours are there, let’s just be thankful!

Colour Burst Cupcakes from Our Best Bites

  • White Cake mix (serisouly, use the one will know)
  • 2 eggs
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/3 cup veg oil
  • food colouring

Preheat the oven as instructed on the cake mix.

Mix all ingredients together, beating on low speed for 30 seconds.  Speed up the mixer to medium and beat for an additional 3 minutes.

Divide batter into 2 bowls (or more, if more colours are desired)

Add food colouring.  I was all out of red paste food colouring, so I had to use A LOT of regular red food colouring.  Add as much as you need to get the right colour.

Fill cupcake liners 2/3 full.  (one spoonfull of each colour)

You may find it helpful to dip your finger in a cup of water and smooth down the batter before adding a second colour.

Bake them up as directed on the mix.   My muffins and cupcakes have been sinking this week when i remove them from the oven  😦  I think it’s been too humid!?

Once cupcakes have cooled, pile them high with buttercream frosting

Oh, these look so good! I’m really jealous of your piping skills. These would sell out in any bakery!
