Lemon Bars

Bakerella has the recipe for these on her website.  I’ve had them before, they’re terribly addictive and super easy to make!

Lemon Bars

Crust

  • 1 cup butter, softened
  • 1 3/4 cups flour
  • 2/3 cup confectioners sugar

Yummy Lemony Goodness topping

  • 1 1/2 cups granulated sugar
  • 1/4 cup flour
  • 1 tsp baking powder
  • 4 eggs, beaten slightly
  • 1/2 cup lemon juice
  • lemon extract (the original recipe didn’t call for this but I think the lemon could have been a bit stronger.  I also used the zest from one of the lemons in my crust)

Preheat oven to 350 degrees.

Line a 9X13″ pan with parchment paper (you could grease it, but parchment is so easy!)

To make the crust: combine all three ingredients, mix them up until the dough forms a ball and press into the prepared pan.  Bake for about 20 minutes or until the edges are nice and golden.

Meanwhile…

Combine sugar, flour and baking powder in a bowl.  Add beaten eggs and Lemon juice.  Beat it up really well until smooth and then pour the mixture on top of the crust.

Pop it back into the oven for 20-25 minutes

Let it cool completely before cutting into bars and dusting with confectioners sugar.  Serve chilled.  YUM
